Vegan Fruit Tart with Maple Granola Crust
I decided I wanted to make a fruit tart when I saw this one from Oh Dear Drea. I didn't want to have to go buy stuff at the store to make the tart though, so I changed up the crust for my own adaptation.
Oh my god, let me tell you, the crust is the best part of this whole recipe. It is the BOMB! Plus all the fresh fruit on top, it's truly delicious. If you have even a slight inkling to make it, DO IT. You won't regret it. I promise.
I'm going to eat a second piece now as I write down the recipe for you all. It's seriously that good.

Vegan Fruit Tart with Maple Granola Crust
Prep Time: 60 Minutes
Servings: 6-8
Ingredients
Crust
1 1/2 cups Rolled Oats
1 cup Pecans
1/4 cup Maple Syrup
1/4 tsp Cinnamon
1/3 cup Coconut Oil
Toppings
3 Ripe Bananas, sliced
1 carton Strawberries, chopped
1/3 cup Unsweetened Shredded Coconut
3 Mangoes, sliced
1 1/2 cup Blueberries
Optional:
Vanilla Bean
Pineapple
Kiwi
Starfruit

Instructions
1. Turn on oven to 400 degrees F.
2. Grind rolled oats and pecans to a powder in a food processor or high powered blender. Place in a bowl and add maple syrup, cinnamon and coconut oil. If your coconut oil is solid, heat it in a pan first to make it easier to work with. Mix thoroughly to combine.
3. In a tart pan, press the crust dough so that it becomes compact. Bake in the oven for 15 minutes. 4. Cool crust for 10 minutes, then place in the fridge to continue cooling while you prep the rest of the ingredients. Completely cool the crust before removing from the tart pan. (Option to make the crust in advance and assemble the filling later.)
4. Place your strawberries in a bowl. Add shredded coconut and mix together. Option to add vanilla bean into this mixture. Set aside while you prepare the rest of your fruit.
5. Take the tart crust out of the fridge and remove carefully from the tart pan. Crust is extremely crumbly, so make sure it is completely cooled before attempting this. Place on a serving dish and start assembling your tart.
6. Start with a layer of ripe bananas at the bottom of the tart. From there cover with the strawberry mixture. At this point, add mangoes, blueberries, pineapple, kiwi, etc. Have fun with it, create something beautiful to look at.
